Emails to your blackberry 8320

i was wondering if somebody could explain me more how that stuff works.. my friend asked me question about this... how he would be able to disable and enable email on his blackberry 8320 lets say: he receives emails during the day and at night he wants to disable function that emails would be transferred to blackberry.
