Changing the defaults of a theme?

Is there a way to change the defaults on a theme? For example, Today has Messages, Calendar, Call Log, & Applications on it's home screen. Can I change them at all or would it depend on themes?

On the today theme, there is no way to rearrange the home screen icons unless you create a whole new theme. On icon & zen you can rearrange your little heart out :)

As I read your response, I manually figured out I could customize on the Zen & it made my day!
